Gluten Free Pie Crust


This yummy, rich crust is perfect for a pumpkin pie.


Makes a 9 Inch Pie
  •  1 cup GF certified rolled oats, processed into a fine flour OR 1 cup GF oat flour
  • 2 cups raw pecans
  • 2 tbsp sugar
  • 3 tbsp ground flax
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 cup brown rice syrup (acts as the binder, honey may work if you prefer that)
  • 1 tbsp Butter of Earth Balance, melted
  • Grease a 9-inch pie dish very well and preheat the oven to 350 F. In a blender, process your oats into a very fine flour. If you don’t think your machine can get the oats fine enough, then I suggest buying oat flour from. The oat flour needs to be very fine in this crust, not flaky or chunky.
  • In a food processor, add 2 cups pecans and process until it starts to clump and oils start to release (about 35 secs), but don’t make pecan butter either. You should be able to make a ball with the pecan dough
  • Melt earth balance with brown rice syrup for about 30 secs in microwave. Stir. Transfer clumpy pecan mixture into a large bowl and mix with the rest of the ingredients. Using your hands, squeeze the dough over and over to combine very well. You should be able to form a ball with it. If it's too dry add a bit more oil.
  • Spoon the pecan dough onto pie dish and smooth out evenly. Press down firmly with fingers to form a crust, bringing it up along the sides. Press as firmly as you can. Prick base with fork 12-13 times. Prebake at 350F for 9-12 minutes, watching closely so it doesn't burn. Remove and cool for 10 mins.

Are Your Skin Problems Actually Gut Problems?

As winter arrives and the air is drier and colder, I am seeing more clients with skin, that is dry, itchy, red, scaly, and sometimes oozing and often diagnosed as Eczema or Psoriasis.   For immediate relief I will often suggest  B-12 Cream and will sometimes even suggest that they get some topical cortisol cream. I know that these are remedies that only treat the symptoms and bring temporary relief but  they are not going to the root cause of why the skin is looking and feeling so very angry. The creams will do nothing to heal the source of the inflammation so that the irritation will not come back.  

Eczema, much like asthma, is an allergic reaction to something or to many things.  After trying to bring initial relief to my patients, the next step, is for me to become a detective to figure out where the source of the allergic reaction is coming from. I have to admit that this is one of my favorite roles that I get to take on.

Surprisingly, eczema is often a symptom indicating that the gut is out of balance and inflamed. It is quite amazing and rewarding to watch the healing that can occur when things like intestinal bad bacteria, yeast, parasites, and bacterial infections are identified and then eliminated from the gut .

Leaky Gut and Allergies & Eczema: The lining of your intestinal wall is only one cell layer thick and if this barrier is breached by continued inflammation from any of the things mentioned above, or a poor diet, or food sensitivities, it can cause the gut to work inefficiently leading to poor digestion and absorption and elimination and sometimes even to something that is referred to as a leaky gut. A leaky gut causes what is known as IgG food allergies.  This type of food allergy is not the type that will cause your throat to close or go into  anaphylactic shock but they will make digestion often feel very unpleasant and cause things that seem to be totally unrelated to the gut to manifest such as eczema or psoriasis.

How does a leaky gut happen?  It can often stem from or be initiated by long term or repeated use of antibiotics, taking birth control pills or HRT.  Parasite or bugs picked up while traveling or camping, stress, a diet high in sugar and refined carbohydrates, the SAD (Standard American Diet) can also contribute to making the gut very unhappy and to having a leaky gut. An inflamed gut can cause necessary nutrients that can support your body and brain to be unavailable which can contribute to many other imbalances.

Steps to Optimal Digestive Health:

1. Remove any infections or overgrowth of bugs, bacteria or yeast:

2. Let the digestive system calm down- Eliminate foods that often cause food allergies.  Remove gluten, dairy, yeast, corn, soy and eggs, alcohol, and caffeine for 1-2 weeks and see what happens to your symptoms.

3.Heal your gut lining with nutrients such as glutamine and zinc so that it can resume it's normal function.

4.Use digestive enzymes while your gut is healing to help your body to break down and convert the foods that you eat into nutrients necessary to run your body and brain.

5. Re-innoculate your gut with the good bacteria that it needs to keep it happy and working efficiently.  That means take probiotic supplements.

6. Get Good Fat:  Cool inflammation by taking extra Omega -3-supplements.  Sometimes Borage oil is also good to reduce inflammation.

7. Eat as your grandparents ate...Eat whole unprocessed living foods.  Include plenty of vegetables, nuts, seeds, fiber and good fats.  Try to prepare as many meals from home.

8. Reduce stress by meditating, yoga, taking walks, getting physical activity at least 5 days a week.  Hitting the pause button daily, even if it is just taking 5-10 minutes each day to notice what you are appreciative of or are grateful for.  Find a community that supports you and that you can be a part of.

Gluten Sensitivity-how to spot and what to do



When it comes to irritation of the digestive tract, ie IBS, abdominal bloating/pain, constipation, there are usually three sources of the irritation: Celiac disease/gluten sensitivity, bacterial infection/ parasites, or an overgrowth of bad bacteria and/or yeast.  

  In both Celiac disease and gluten intolerance, the body experiences adverse effects when gluten which is the protein found in wheat, rye, and spelt is eaten.  Symptoms can often look the same with both Celiac disease and Gluten intolerance.

I have found that probably the easiest and most profound way to determine if you have an intolerance or sensitivity to Gluten is to eliminate it for 30 days and then add it back in.  Notice any allergic reaction that you might experience which can range from bloating, heartburn, diarrhea, constipation, puffiness, 2-3 pound weight gain overnight (due to histamine production) or sleepiness after eating a high carbohydrate meal.

Sometimes, it can seem overwelming to take gluten completely out of your diet.  I have some wonderful menus and recipes that can help.  If you are interested in receiving these, please e-mail me.

There is are simple tests to determine if you might have a parasite or bacterial infection, overgrowth of bad bacteria/yeast or a gluten sensitivity.  If you do suffer from gassiness, bloating, reflux, or even anxiety, I would recommend completing a simple stool test that you can do in your own home and mail off to the lab.

Toxins and your muffin top

Retaining fat around your stomach is often a sign of toxic buildup in your system. When your body  becomes overloaded from the chemicals in the foods you eat as well as your environment, it seeks to protect itself as best as it can.  One of the ways that your body does this, is to retain fat in order to have a place to store the toxins.  Yes, fat cells are the storage sites for toxins and in particular, in the visceral fat which is the fat that forms in your abdominal region and causes the muffin top.  Detoxifying is a great step towards losing weight in you abdominal area.  The following are some steps that you can take to detoxify your system.
  • Eat organic foods and as much raw foods as you can (including raw dairy products, if available in your state)
  • Minimize or eliminate processed and fast foods
  • Eliminate refined sugar
  • Eliminate carbonated beverages and energy drinks and drink pure, fresh water instead.
  • Start each day with a glass of warm water with organic lemon
  • eliminate dairy and gluten grains if you have a sensitivity to these.
  • Take probiotics and eat probiotic rich foods, such as fermented foods and yogurt.
A fun food to add that can also help are Chia Seeds.  They help to stabilize blood sugar, contain lots of fiber and improve your sensitivity to insulin which is a FAT storing hormone.  They are also a source of protein and good fats.

Fresh Greens will help fill you up, giving your body the enzymes it needs for full digestion.  Greens are also big in fiber and nutrition and are a carbohydrate that do not raise your blood sugar.  Greens go well beyond lettuce and spinach.  Try out kale, arugula, cabbage, endive, fennel cilantro, parsley, as they all have wonderful detoxifying abilities.

The health of you digestive system plays a big role in lowering your toxic load.  Start to notice which foods really make you bloated afterwards and avoid those foods.  If you find that you bloat with many foods, you may have what is termed Leaky Gut Syndrome, which can be determined by a simple salivary test and then healed.  If you do have Leaky gut, Syndrome, you may find that is is difficult for you to digest raw vegetables and nuts.  To get around this, while your gut heals, cook your vegetables and puree them for soups and soak your nuts to help breakdown fiber.

Prevent Alzheimer's and Parkinson's lecture


Can Alzheimer’s and Parkinson’s Disease be Prevented?


Yes, they can.  Please come to a lecture that I am giving on June 21st to find out what you need to know to prevent these two very debilitating diseases.

As a Functional Medicine Practitioner, I will be explaining the root causes of Alzheimer's and Parkinson's.  I will speak on the ways that lifestyle, nutrition, stress, toxins, liver function, overuse of antacids, medications and the health of the digestive system can all play a role in the likelihood of getting these two diseases.

You will come away with the knowledge that you do not have to get either one of these diseases even though you may have a genetic predisposition.  Given the correct tools and knowing where the breakdown or origination of the disease occurs, the body can often heal itself.  You will be given these tools at this lecture.

Testosterone....and it's role in preventing heart attacks, strokes and depression.

Testing total and Free Testosterone Levels along with Testosterone replacement is important in the prevention of heart attacks, strokes, depression, Diabetes, and even brain function or cognition.

The fact is, aging is accompanied by reduced levels of hormones required to sustain life.  But did you know that Heart Disease, osteoporosis, muscle wastingchronic inflammation, depression, reduced sexual desire and a loss of sense of well-being are all strongly linked to testosterone deficiency. Low testosterone is also associated with excess abdominal fat, loss of insulin sensitivity, and atherosclerosis. 

If this is true, then why have so many doctors shied away from giving their patients testosterone replacement?    It is mainly due to  studies that have shown that it led to increased prostate cancer. And also due to Western Doctors' lack of knowledge/understanding of how hormones work together in the body to create a beautiful choreographed symphony.  The idea of testosterone replacement causing prostate cancer was thoroughly discredited by Harvard professor, Agraham Mortgentaler in his book, Testosterone for Life, published in 2008. In fact, his scientific compilations showed that men with low testosterone levels have an increased percentage of prostate cancers.

What is confusing for doctors and patients, alike, is that testosterone studies have not been consistent and in part, this is due to differing laboratory methodologies, which produce varying result. There has also been conflicting data regarding the safety of giving testosterone to patients mainly due to the fact that mainstream Doctors, conducting the trials,  know nothing about hormone balance.  Clinical trials have been designed  by doctors who have not realized the necessity of blood levels of testosterone and estrogen to be in balance. Yes, estrogen-men have it too.  If there is too little estrogen then men are predisposed to osteoporosis and bone fracture.  If there is too much then there is a bigger predisposition to prostate cancer.

So how do men make Estrogen? Women synthesize it mainly in their ovaries.  Since men lack this female anatomy, they  produce estrogen from testosterone involving an enzyme called aromatase. Some men have too much aromatase (that often comes from too much belly fat) which causes their testosterone to convert to excess estradiol.  This results in the depletion of vital testosterone while spiking estradiol to unsafe ranges.  Some men lack aromatase and suffer an estrogen deficit.  Other  men produce so little testosterone that there is not enough to convert into estrogen which causes low levels of both free testosterone and estradiol.  Some estrogen and testosterone is also produced in the adrenal glands from DHEA.
  
So let's go back to how men make estradiol and how can excess amounts be prevented from being made from free testosterone.  There are some natural substances, such and DIM and Calcium-d-Glucarate which can inhibit the production of excess estradiol from free testosterone.  I would recommend to all men taking testosterone replacement to also take DIM and have their estradiol levels monitored along with their free and total testosterone, and DHEA levels on a regular basis.

The optimal serum ranges for hormones are:
(these ranges are taken from Life Extension Magazine June 2012)
Total Testosterone  700-900 ng/dl (conventional labs allow as low as 193 ng/dl)
Free Testosterone    20-25 ng/dl (conventional labs allow as low as 6.6 ng/dl)
Estradiol                  21.80-30.11 pg/ml
DHEA                    120-530 ug/dl

Hello All!

Well, you're on the home stretch and I am looking forward to hearing about your experiences and to also feed you a wonderful simple meal. Juicing and blood sugar

If you're feeling a bit light headed or in a fog, during the first 3 days of detox throw some chia seeds in your juices, or have a handful of raw nuts (preferably soaked for this part of the detox) 3-4 times a day.  A half of an avocado with a little bit of balsamic vinegar drizzled on top will also help level out blood sugar and energy.  Also during these three days you may want to reduce your activity level to one work out a day-preferably do a hot yoga class daily to help calm you and to sweat toxins out.


Remember to drink lot's of water!!!!!
